2 cups ripe strawberries, cored, divided
8 oz. mascarpone cheese
6 oz. silken tofu
1/4 cup powdered sugar
1 tbsp. lemon juice
1/2 cup whipped cream
2 large strawberries, washed and cut in half (leaves left on)


  1. Place 1 cup strawberries, mascarpone cheese, tofu, powdered sugar and lemon juice in the Bowl and blend on 2 until smooth.
  2. Slice remaining cup of strawberries and layer with pudding in tall stemmed glasses.
  3. Top with a dollop of whipped cream and garnish each serving with one-half strawberry.
