New York Style Chicken Wings

1/2 cup hot sauce,
1/4 cup unsalted butter,
1/2 teaspoon chili powder,
1/2 teaspoon cumin,
1/2 finely chopped Tabasco or habanero pepper (optional),
2 pounds chicken wings (12 to 14)
- Combine first five ingredients in a saucepan and bring to a boil. Lower heat, cover, and simmer sauce for 15 minutes. Remove from heat and set aside in a large bowl.
- Preheat fryer to 375°F.
- Place basket in fryer, and carefully lower half of the wings into the oil using tongs. Fry for 7 minutes. Drain on paper towels. Repeat with second half of wings.
- Add fried wings to hot sauce and toss to coat before serving.
Serve with crunchy celery and carrot sticks.
