1/2 medium carrot, peeled, cut in 1-inch pieces
1 can (15 ounces) white beans, rinsed, drained, divided
1/2 cup cooked quinoa
1 large egg
1/2 cup bread crumbs
1 teaspoon salt
1 teaspoon ground black pepper
1 tablespoon ground oregano
1/2 teaspoon smoked paprika
1 tablespoon canola oil
- Place onion and carrot into the 64-ounce Precision Processor. Select CHOP. Add 1/2 the white beans to Nutri Bowl. Select CHOP.
- Transfer onion mixture to a medium mixing bowl. Add remaining white beans, quinoa, egg, bread crumbs, salt, pepper, oregano, and paprika. Stir to combine.
- Divide mixture evenly and shape into 4 patties. Add canola oil to a large sauté pan over medium-high heat. When oil is hot, add patties. Cook 8 minutes, or until heated through, flipping halfway through cooking.
- Serve over a salad or on a toasted bun.
