15 red bell peppers, seeds removed, roasted, peeled
1 cup sun-dried tomatoes
3 large cloves garlic, peeled
1 cup white wine
1 bunch Italian parsley, trimmed
2 3/4 cups low-sodium vegetable broth
Salt and pepper, to taste
Balsamic vinegar, for garnish


  1. Place all ingredients, except balsamic vinegar, into the 88-ounce Blender Pitcher in the order listed.
  2. Select BOOST YES Auto iQ® PUREE.
  3. Transfer to a medium saucepan and simmer until heated through, about 10 minutes. Serve warm in bowls garnished with a splash of balsamic vinegar.
NOTE: Always allow the soup to cool to room temperature before blending. Once blended, transfer mixture back to a saucepan and heat to desired temperature.
