  1. 1 teaspoon olive oil
  2. 1/2 onion, peeled, chopped
  3. 1 carrot, peeled, chopped
  4. 1 stalk celery, trimmed, chopped
  5. 2 garlic cloves, peeled, chopped
  6. 2 teaspoons ground cumin
  7. 1 teaspoon dried oregano
  8. 3 cups cooked black beans, drained
  9. 2 chipotle peppers
  10. 1 3/4 cups low-sodium chicken broth, plus more to thin if desired
  11. Salt and pepper, to taste
  12. Sliced avocado, for garnish
  13. Crumbled Mexican or Jack cheese, for garnish


Container: 48-ounce XL Multi-Serve Nutri Ninja®
  1. Heat oil in a 3-quart saucepan on medium-high heat and sauté onion, carrot, celery, garlic, cumin, and oregano until vegetables are softened. Cool to room temperature.
  2. Place cooled vegetables, black beans, chipotle peppers, chicken broth, salt, and pepper into the 48-ounce XL Multi-Serve Nutri Ninja.
  3. Select Auto-iQ BLEND.
  4. Remove the blades from the cup after blending.
  5. Return pureed soup to saucepan and simmer until heated through.
  6. Garnish each serving with avocado slices and crumbled cheese.

NOTE: Always allow the soup to cool to room temperature before blending. Once blended, transfer mixture back to a saucepan and heat to desired temperature.
