Ingredients

4 cups corn, thawed or cooked
1 medium red bell pepper, seeded
1/2 red onion, peeled
2 garlic cloves, peeled
1/4 cup parmesan cheese
1 tbsp. olive oil
1 tsp. cumin
1 tsp. smoked paprika
1 tbsp. hot sauce
1/2 cup water
Salt and pepper to taste

Instructions

  1. Place 3 cups corn and remaining ingredients into the 48 oz. Pitcher and pulse until desired consistency, add more water if needed.
  2. Transfer the mixture to a large saucepan over medium-high heat. Add the final cup of corn to the soup and heat for 5 minutes or so.
NOTE: Always allow the soup to cool to room temperature before blending. Once blended, transfer mixture back to a saucepan and heat to desired temperature.
