Ingredients

3/4 lb. jumbo sized pasta shells
1 tbsp. olive oil
1/2 medium onion, peeled and roughly chopped
4 garlic cloves, peeled and roughly chopped
1 cup small curd cottage cheese
1 cup fat free ricotta cheese
1 1/2 cups pumpkin puree
1 large egg
1 tsp. Italian dried herb seasoning
1 jar tomato sauce

Instructions

  1. Prepare pasta shells according to package instructions. Drizzle with olive oil and transfer to a baking sheet.
  2. Place the remaining ingredients, except tomato sauce, into the 40 oz. Processing Bowl and pulse until well combined.
  3. Preheat oven to 350 degrees and spread the tomato sauce into a baking dish. Next, spoon the cheesy pumpkin mixture into each shell and place into the dish.
  4. Cover and cook for 30-40 minutes.
