1 tbsp. olive oil
1/2 medium onion, peeled and roughly chopped
4 garlic cloves, peeled and roughly chopped
1 cup small curd cottage cheese
1 cup fat free ricotta cheese
1 1/2 cups pumpkin puree
1 large egg
1 tsp. Italian dried herb seasoning
1 jar tomato sauce
Instructions
- Prepare pasta shells according to package instructions. Drizzle with olive oil and transfer to a baking sheet.
- Place the remaining ingredients, except tomato sauce, into the 40 oz. Processing Bowl and pulse until well combined.
- Preheat oven to 350 degrees and spread the tomato sauce into a baking dish. Next, spoon the cheesy pumpkin mixture into each shell and place into the dish.
- Cover and cook for 30-40 minutes.
