Ingredients
2 tbsp. red curry paste
1/3 cup peanut butter
4 cups low sodium chicken broth
2 (15oz.) cans pumpkin puree
2 cups coconut milk
Instructions
Place ingredients into the 72 oz. Pitcher and blend until smooth. Transfer the mixture to a large saucepan over medium-high heat. Cook for 3-5 minutes or so and then ladle into bowls and enjoy!
NOTE: Always allow the soup to cool to room temperature before blending. Once blended, transfer mixture back to a saucepan and heat to desired temperature.
