1 head of cauliflower, cut into florets
1 tbsp. butter
1 tsp. lemon juice
Salt and pepper to taste
- Place the onion into the 48 oz. Pitcher and pulse until finely chopped. Add the cauliflower florets and pulse until evenly chopped, but not too fine. (Store extra cauliflower rice in a ziploc bag for 3 days or so.)
- Next, heat olive oil in a skillet over medium high heat. Add the cauliflower and onion mixture, lemon juice, salt and pepper and stir every minute or so for 6-8 minutes for al dente “rice.” Cover the skillet and allow it to steam for 1-2 minutes for more tender rice. Serve with your favorite stew or add additional spices for flavored rice.
