Artichoke and Bean Soup

1 (14oz.) can artichoke hearts, drained
1 (15oz.) can cannellini beans, rinsed and drained
1 tsp. olive oil
2 garlic cloves, minced
2 cups reduced sodium chicken broth
Salt and pepper to taste
- Place the artichoke hearts and beans into the 40 oz. Processing Bowl and blend until smooth.
- Add the olive oil and garlic to a saucepan over medium heat and sauté for 3 minutes or so.
- Add the puree and broth to the saucepan and heat. Add salt and pepper to taste and enjoy!
NOTE: Always allow the soup to cool to room temperature before blending. Once blended, transfer mixture back to a saucepan and heat to desired temperature.
