Spaghetti Squash with Broccoli Cheese Sauce

3 tbsp. olive oil
Salt and pepper to taste
1 tbsp. butter
1 small onion, diced
1 tsp. minced garlic
1/2 head of broccoli, cooked
3/4 cup feta cheese
2 tbsp. lemon juice
1/3 cup water
- Preheat oven to 400 degrees. Drizzle 2 tbsp. olive oil over the squash flesh, sprinkle with salt and pepper and then place cut side down onto a baking sheet. Roast for 45 minutes or until flesh is tender.
- Once cooled, use a fork to gently scrape the spaghetti like strands, strain if needed and transfer to a serving bowl. Set aside.
- Add the butter, onions and garlic to a skillet over medium high heat. Sauté until onions soften and become translucent.
- Transfer onions and garlic to the 72 oz. Blender and add the remaining ingredients. Blend until smooth and season with additional salt and pepper to taste. Add more water if sauce is too thick. Serve this healthy sauce over spaghetti squash noodles and enjoy!
