2 tsp. olive oil
1 leek, cleaned and sliced
4 cups kale, chopped and stems removed
3 cups vegetable broth
Salt and pepper to taste


  1. Heat olive oil in a sauté pan over medium high heat. Add leek and kale and cook until softened and wilted.
  2. Add the vegetable broth and cook over medium heat for 20-25 minutes or so and then remove from heat.
  3. Once cooled, transfer the soup into the 40 oz. Blender and blend until smooth. Microwave or return to pot and heat through.
NOTE: Always allow the soup to cool to room temperature before blending. Once blended, transfer mixture back to a saucepan and heat to desired temperature.
