Kale and Leek Soup

2 tsp. olive oil
1 leek, cleaned and sliced
4 cups kale, chopped and stems removed
3 cups vegetable broth
Salt and pepper to taste
- Heat olive oil in a sauté pan over medium high heat. Add leek and kale and cook until softened and wilted.
- Add the vegetable broth and cook over medium heat for 20-25 minutes or so and then remove from heat.
- Once cooled, transfer the soup into the 40 oz. Blender and blend until smooth. Microwave or return to pot and heat through.
NOTE: Always allow the soup to cool to room temperature before blending. Once blended, transfer mixture back to a saucepan and heat to desired temperature.
