Roasted Cauliflower Fettuccine Alfredo

1/2 onion, peeled, cut in half
2 tablespoons olive oil
Salt and pepper to taste
1 1/2 cups low-fat milk
2 cups Parmesan cheese, grated
1/8 teaspoon ground nutmeg
1 pound fettuccine noodles, cooked, kept warm
2 tablespoons fresh parsley, chopped
- Toss cauliflower and onion with oil, salt and pepper and roast in a shallow baking pan at 375°F for 25 minutes, until tender and lightly browned. Cool to room temperature.
- Using the Bottom Blades in the Pitcher, add the cooled vegetables and milk. PULSE 3 times. Add the cheese, select Speed 1 and flip the switch to START. Slowly increase to Speed 6 and blend until smooth.
- Pour sauce into saucepan, add nutmeg and simmer until heated through, about 10 minutes.
- Toss with fettuccine and serve hot, garnished with parsley.
