Peach Almond Cobbler with Cookie Topping

4 bags (16 ounces each) frozen sliced peaches, thawed and drained, juice reserved
2 tablespoons cornstarch
1/2 cup sugar
2 teaspoons almond extract
1 package (7 ounces) almond or sugar cookies, crushed (about 2 cups crushed)
Sweetened whipped cream
- Stir reserved peach juice and cornstarch in pot. Add peaches, sugar, and almond extract and stir to coat. Set OVEN to 325°F for 30 minutes. Cover and bake until peaches are tender.
- Turn off pot. Let peach mixture cool in pot 5 minutes. Sprinkle with cookie crumbs. Serve with whipped cream.
