2 tbsp. butter
1/2 small butternut squash, peeled, cut in chunks
1 sweet potato, peeled, cut in chunks
1 6 oz. can pumpkin puree
6 cups chicken stock
1/2 cup smooth peanut butter
1 tsp. salt
1/2 tsp. cayenne pepper
1/2 tsp. brown sugar
1/2 cup crème fraiche


  1. In a large soup pot, melt butter over medium heat. Add squash, potato and pumpkin and sauté, stirring occasionally, until softened, about 8 to 10 minutes. Cool to room temperature.
  2. Transfer to Pitcher and blend on 2 until smooth.
  3. Return mixture to soup pot over very low heat and stir in the chicken stock, peanut butter, salt, cayenne, and brown sugar and simmer for 30 minutes.
  4. Taste and adjust seasonings. Serve hot, garnished with a dollop of crème fraiche.
NOTE: Always allow the soup to cool to room temperature before blending. Once blended, transfer mixture back to a saucepan and heat to desired temperature.
