Ingredients

Spiced Lentil Ingredients:
1/2 cup dried lentils
2 cups vegetable stock or water
1 teaspoon garlic powder
1 teaspoon ground coriander
1/2 teaspoon onion powder
1/2 teaspoon chile powder
1/4 teaspoon sea salt flakes
1/4 teaspoon cracked black pepper

Cauliflower Tabbouleh Ingredients:
1 bunch Italian parsley, woody stems removed
8 mint leaves
1/4 small red onion, cut in 1-inch chunks
1/2 head cauliflower, grated
1 cup whole cherry tomatoes
Zest and juice of 1 organic lemon
1 teaspoon extra virgin olive oil
1/2 teaspoon sea salt flakes
1/4 teaspoon cracked black pepper
1/4 teaspoon crushed red pepper flakes, optional

Instructions

Container: 64-ounce Food Processor Bowl

Spiced Lentil Instructions:
Place lentils and stock into a small pot and bring to a boil. Cover and lower heat to medium-low. Simmer for 15 to 20 minutes or until the liquid has evaporated and the lentils have become tender. Gently stir in the remaining spiced lentil ingredients until fully incorporated. Set aside until ready to use.

Cauliflower Tabbouleh Instructions:
  1. Place all tabbouleh ingredients into the 64-ounce Food Processor Bowl in the order listed.
  2. Turn unit ON, then hold down Auto-iQ PULSE 10 times, until finely chopped.
  3. To serve, place tabbouleh in a shallow bowl and top with spiced lentils.
