This dip contains parsley, known to have 3x the Vitamin C of an orange. Plus, it’s gluten-free!
1/4 small yellow onion, peeled, quartered
1/4 cup loosely packed fresh mint with stems removed
1 cup loosely packed flat leaf parsley
2 vine ripe tomatoes, quartered
1/2 teaspoon ground black pepper
1/2 teaspoon kosher salt
1 tablespoon extra virgin olive oil
3 tablespoons freshly squeezed lemon juice
- Place all of the ingredients into the Regular 24-ounce Nutri Ninja® cup, starting with English cucumber.
- Hold down "PULSE" 5-10 times until desired consistency is achieved.
- Remove the blades from the cup after blending.
