Ingredients

2 large oranges
1 1/2 pounds carrots, peeled and cut into 1/2-inch thick slices
2 tablespoons butter
1 teaspoon salt
2 tablespoons honey
1 teaspoon fresh thyme leaves, minced, or 1/4 teaspoon dried thyme

Instructions

  1. Grate 1/2 teaspoon zest and squeeze 3/4 cup juice from oranges. Stir carrots, 1 tablespoon butter, orange juice, and salt in pot.
  2. Set to STOVETOP HIGH. Cover and cook 10 minutes or until carrots are tender-crisp, stirring occasionally.
  3. Uncover pot. Cook uncovered until liquid is reduced to? 2 tablespoons.
  4. Stir in remaining butter, honey, orange zest, and thyme. Cook uncovered 3 minutes or until carrots are tender, stirring often.
