Parmesan Cauliflower Cups

Ingredients

2 lbs. cauliflower florets, steamed until soft and cooled
1/2 cup low fat sour cream
1 tsp. salt
1 tsp. ground black pepper
1/2 cup parmesan cheese, grated, plus more for topping

Instructions

  1. Preheat the oven to 375° degrees. Lightly coat 6 ramekins with cooking spray.
  2. Place half each of the cauliflower, sour cream, salt, pepper and Parmesan cheese in the 40 oz. Processing Bowl. Pulse briefly. Repeat with the remaining half of each ingredient.
  3. Portion out the mixture into the ramekins. Top with additional Parmesan cheese.
  4. Bake for 15 minutes, or until heated through and the cheese has become golden. Serves 6.
