1 cup beets, cooked
3 tbsp. lemon juice
1/2 sweet onion, peeled and chopped
1 cup Greek yogurt
1/4 cup cool water
Place ingredients into the 40 oz. Processing Bowl and blend until smooth. Chill before serving.
NOTE: Always allow the soup to cool to room temperature before blending. Once blended, transfer mixture back to a saucepan and heat to desired temperature.
