Ingredients

3/4 cup all-purpose flour
1/2 cup whole wheat flour
2 tbsp. wheat germ
1 tsp. ground cinnamon
1 tsp. baking powder
1/2 tsp. baking soda
Pinch salt
1/3 cup vegetable oil
1/2 cup buttermilk
2 large eggs
3/4 cup light brown sugar
2 cups grated carrots

Instructions

  1. Preheat oven to 350°F. Place ingredients, except carrots, into the 48 oz. Blender and blend until well-mixed. Add carrots to the blender and pulse 2-3 times until well-combined.
  2. Line a muffin pan with paper cups and spoon the carrot batter into the cups. Bake for 18-20 minutes, or until a pick inserted into the middle comes out clean.
