Apples and Prosciutto in Sweet Potato Pastry
6 large eggs
1 large Fuji apple, peeled, cored and roughly chopped
3 oz. prosciutto, cooked and chopped
Salt and pepper to taste
- Preheat oven to 400°F. Coat a 10 inch quiche or pie pan with cooking spray and press the potato pastry evenly onto the sides and bottom. Bake for 8-10 minutes. Remove and reduce the heat to 350°F.
- Place the eggs and apple in the 40 oz. Processing Bowl and pulse until the apple is evenly chopped. Add the prosciutto, salt, pepper and nutmeg and pulse 2-3 times. Pour into the pastry and bake for 35-45 minutes, until the center is set. Cut into wedges and serve while warm.
