Ingredients

1 1/2 lbs. sweet potatoes, peeled and roughly chopped
1 carrot, peeled and roughly chopped
1 small sweet onion, peeled and roughly chopped
1/3 cup low sodium chicken broth
1/2 tsp. salt
Pinch black pepper
2 tbsp. + 2 tsp. flour

Instructions

For use in our recipe for Apples & Prosciutto in Sweet Potato Pastry.
  1. Place the sweet potatoes, carrots and onions into the 40 oz. Processing Bowl and pulse until finely chopped. Spoon into a large microwave bowl, cover and cook on high for 4-5 minutes, or until the potatoes are soft. Cool slightly.
  2. Position the dough blade in the Bowl; return the vegetables to the bowl and add the chicken broth, salt, pepper and flour. Pulse until very smooth. Proceed as the recipe directs. Makes 1 pastry.
