Roasted Garlic, Kasseri and Bacon Pizza with Arugula Topping
1/2 tsp. red pepper flakes
1/4 cup olive oil
4 slices thick smoked bacon, cut in pieces
1 recipe Classic Pizza Dough (click here for recipe)
1 cup Kasseri cheese, shredded
1/4 cup parmesan cheese, shredded
1/2 white onion, thinly sliced
1 cup arugula
- Place garlic, red pepper and oil in the Single Serve Cup. Press the Single Serve button and hold until smooth. Remove the blades from the cup after blending. In a small sauté pan over medium heat, cook the bacon for 2 to 3 minutes just to render fat. Do not brown; drain on paper towels.
- Punch pizza dough down and, on a lightly floured work surface, roll or press the dough to about 1/2-inch thickness. Transfer to a pizza pan scattered with cornmeal. Spread the roasted garlic sauce over the dough, leaving a small border around the edge. Scatter evenly with the cheeses, onion and bacon.
- Bake pizza until bubbly, cheese is melted and crust is golden, about 8 to 12 minutes. Top with arugula, slice and serve.
