Creamy Baked Eggs
4 tablespoons heavy cream or half and half
salt and ground black pepper
1 cup water
- Place bacon strips into pot. Set to STOVETOP HIGH. Cook uncovered 10 minutes or until bacon is crisp on both sides. remove bacon from pot and drain on paper towels. Crumble bacon.
- Spoon 1 tablespoon cream into each of 4 custard cups. Crack 1 egg into each cup. Season with salt, black pepper, and nutmeg.
- Pour water into pot. Place roasting rack into pot. Place custard cups on rack. Set OVEN to 400°F for 10 minutes. Cover and cook until eggs are set, checking after 5 minutes for softly set. Sprinkle with bacon.
