Ingredients

2 tbsp. olive oil
2 cups baby spinach, washed
1 garlic clove, peeled
1/3 cup lowfat cream cheese
1/3 cup lowfat Greek yogurt
1/4 cup Parmesan cheese, grated
1/4 cup part-skim mozzarella cheese, shredded
24 slices turkey breast, thinly sliced

Instructions

  1. Preheat oven to 350°F. Place ingredients, except turkey breast, into the 40 oz. blender and pulse 5-6 times.
  2. Place one turkey slice into each mini muffin pan cup, then spoon mixture into each cup.
  3. Bake for 15 minutes and serve.
