1 1/2 cups spinach, rinsed and dried
4 egg whites
1/2 small red bell pepper, seeded and roughly chopped
1/4 medium red onion, peeled and roughly chopped
1/4 cup diced mushrooms
1/4 cup cheddar cheese, shredded
Preheat oven to 350°F. Place ingredients into the 40 oz. Blender and blend until well-chopped and combined.
Line a muffin pan with baking cups and spray with nonstick cooking spray. Spoon the egg mixture into the individual muffin cups and bake for 20-25 minutes.
