1 cup baby carrots
1 onion, cut into wedges
6 small potatoes, cut in half
6 sprigs thyme or 1 teaspoon dried thyme leaves, crushed
1 corned beef brisket (about 4 pounds) with pickling spice packet
1/2 head green cabbage, cut into wedges
- Place celery, carrots, onion, potatoes, thyme, pickling spice into the Cooking System pot. Place beef into pot, fat side up. Add enough water to almost cover beef. Set to SLOW COOK HIGH for 4 to 5 hours. Cover and cook until beef is fork-tender.
- Arrange cabbage over beef. Set to SLOW COOK HIGH for 40 minutes. Cover and cook until cabbage is tender.
