Ingredients

2 tbsp. olive oil
10 tomatillos, peeled and halved
1 small white onion, peeled and cut in thick slices
5 garlic cloves, peeled, roughly chopped
1 bunch cilantro, rinsed
4 oz. can mild diced chilies
4 boneless skinless chicken breasts

Instructions

Preheat oven to 350°F. Drizzle the olive oil into the bottom of a 2-quart shallow baking pan. Add the tomatillos, onion and garlic and roast for 25-30 minutes. Let stand a few minutes to cool, then add to the 72 oz. Blender and blend until smooth. Add the cilantro and chilies and blend for 30 seconds to combine. Place the chicken breasts in the baking pan and pour the chile verde sauce generously over each breast. Bake for 30-40 minutes or until cooked through and no pink remains.
