Ingredients

1 tbsp. olive oil
1 white onion, peeled and quartered
4 tomatoes, quartered
4 cloves garlic, peeled
1 leek, white parts only, roughly chopped
3 leaves basil
1 tbsp. lemon juice
4 Portobello mushrooms, cleaned
1 cup shredded parmegiano cheese

Instructions

Preheat oven to 400°F. Pour the oil into a medium saucepan and heat to medium. Place the onion, tomatoes, garlic, leek and basil leaves into the 72 oz. blender and pulse 3-4 times. Transfer the mixture to the sauté pan, add the lemon juice and stir every few minutes for 8-10 minutes. Place the mushrooms, bottom side up, on a lightly greased baking sheet. Fill each mushroom with the vegetable mixture. Sprinkle the shredded cheese over each mushroom and bake for 12-15 minutes.
