Ingredients

1/2 cup pecans
1/2 cup walnuts
1 cup oat bran
1/2 cup wheat bran
2 tbsp. flaxseed
1 1/2 cups flour
1/4 tsp. salt
1 1/2 tsp. baking soda
1 egg
1/2 cup unsweetened applesauce
1/4 cup low-fat buttermilk
1/4 cup canola oil
1/4 cup dark brown sugar, packed
1 cup raisins

Instructions

  1. Place the pecans and walnuts in the Single Serve Cup and pulse the Single Serve button until chopped. Remove and set aside.
  2. Preheat the oven to 375 °F. Coat a muffin tin with cooking spray or use cupcake papers.
  3. Place the dough attachment in the Bowl and add the oat bran, wheat bran, flax seeds, flour, salt and baking soda and blend on 1 just to combine.
  4. Add the egg, applesauce, buttermilk, oil, and sugar and blend on 1, scraping sides as needed.
  5. Stir in the raisins, pecans and walnuts.
  6. Spoon into prepared muffin tin and bake for 25 to 30 minutes, or until baked through. Cool on a wire rack before serving.
