Sweet Potato Mash
3 large sweet potatoes, peeled and roughly chopped,
3/4 cup coconut milk,
1 tsp. brown sugar,
1/2 tsp. ground cinnamon,
Salt and pepper to taste,
marshmallows for garnish
- Place the potatoes in a large pot with enough water to cover the potatoes. Cover and cook over medium-high heat for about 15 minutes or until tender.
- Remove from the heat, strain and transfer to the 72oz. Pitcher. Add the coconut milk, sugar, cinnamon, salt and pepper to the Pitcher and blend until smooth.
- Transfer to a serving dish and garnish with pecans or marshmallows, if desired.
