Caramelized Onion Frittata
2 tablespoons butter,
1 tablespoon canola oil,
4 onions, thinly sliced,
1 tablespoon chopped thyme leaves,
1 1/2 cups grated Gruyère cheese,
Chopped fresh chives
- Beat eggs in a bowl. Season with salt and pepper.
- Place butter and oil into Ninja Cooking System pot. Set to STOVETOP HIGH and heat until butter is melted. Add onions and thyme to pot and season with salt and pepper. Cook uncovered for 20 minutes or until onions are deep brown and tender, stirring occasionally.
- Add beaten eggs to the pot. Cook 1 minute and stir in cheese. Set to OVEN 325°F for 10 minutes, cover and cook, stirring after 3 minutes. Cook another 5-7 minutes or until egg mixture is set.
- Invert frittata onto serving platter. Sprinkle with chives.
