1 tablespoon olive oil,
1 tablespoon butter,
1 carrot, peeled and chopped,
1 stalk celery, trimmed and chopped,
1/4 white onion, peeled and chopped,
1 potato, peeled and chopped,
5 cups fish stock,
1/4 cup brandy,
2 tablespoons tomato paste,
1 tablespoon Old Bay seasoning,
1/4 teaspoon cayenne pepper,
1/8 teaspoon ground allspice,
10 ounces lump crab meat,
1 cup evaporated milk


  1. Set Ninja Cooking System to STOVETOP HIGH and add oil and butter to pot. Add carrot, celery, onion and potato. Sauté until just softened.
  2. Add fish stock, brandy, tomato paste and seasonings. Bring to a boil.
  3. Reduce heat, add half of the crab meat and gently simmer for 10 minutes. Cool to room temperature.
  4. Using the Bottom Blades in the Pitcher of the ULTIMA blender, add the soup in batches.
  5. Select Speed 1 and flip the switch to START. Slowly increase to Speed 6 and blend for 30 seconds or until smooth.*
  6. Return soup to the Ninja Cooking System, set to STOVETOP MED and stir in evaporated milk, remaining crab meat and simmer until thoroughly heated through, about 15 minutes. Serve hot in bowls.
    NOTE: Always allow the soup to cool to room temperature before blending. Once blended, transfer mixture back to a saucepan and heat to desired temperature.
    *If your UltimaTM has preset speeds, follow the first 4 steps and then do the following: Set to LOW and flip the switch to START. Blend for 5 seconds. Increase to MED and blend for 30 seconds or until smooth.
