Whole Lemon Tart with Pistachio Crust
1/2 cup all-purpose flour,
1/4 cup sugar,
1/4 teaspoon salt,
1/2 stick butter, melted,
1/2 teaspoon vanilla,
Non-stick cooking spray,
1 lemon, organic or washed, coarsely chopped and seeds removed,
1 cup sugar,
3 tablespoons lemon juice,
3 large eggs,
4 tablespoons butter, melted,
- Preheat to 350°F. Place the Top Blades in the Ninja Ultima Pitcher and add pistachios. PULSE until finely ground. Pour pistachio flour and all-purpose flour into a medium bowl and add sugar, salt, butter and vanilla. Stir with a fork until fully incorporated. Lightly coat and 8” tart pan with non-stick cooking spray and press crust mixture into pan. Bake for 13-15 minutes, or until lightly golden brown.
- Reduce heat to 300°F. Place lemon, sugar, lemon juice, eggs and melted butter into the Pitcher.
- Select Speed 1. Flip the switch to START and slowly increase to Speed 9. Blend for 45 seconds or until smooth.*
- Pour lemon mixture oven into crust and bake for 20 minutes or until just set in center. Let cool. Place powdered sugar in a fine sieve and dust top. Store in refrigerator.
