Whole Lemon Tart with Pistachio Crust

Ingredients

1 cup pistachios,
1/2 cup all-purpose flour,
1/4 cup sugar,
1/4 teaspoon salt,
1/2 stick butter, melted,
1/2 teaspoon vanilla,
Non-stick cooking spray,
1 lemon, organic or washed, coarsely chopped and seeds removed,
1 cup sugar,
3 tablespoons lemon juice,
3 large eggs,
4 tablespoons butter, melted,
Powdered sugar

Instructions

  1. Preheat to 350°F. Place the Top Blades in the Ninja Ultima Pitcher and add pistachios. PULSE until finely ground. Pour pistachio flour and all-purpose flour into a medium bowl and add sugar, salt, butter and vanilla. Stir with a fork until fully incorporated. Lightly coat and 8” tart pan with non-stick cooking spray and press crust mixture into pan. Bake for 13-15 minutes, or until lightly golden brown.
  2. Reduce heat to 300°F. Place lemon, sugar, lemon juice, eggs and melted butter into the Pitcher.
  3. Select Speed 1. Flip the switch to START and slowly increase to Speed 9. Blend for 45 seconds or until smooth.*
  4. Pour lemon mixture oven into crust and bake for 20 minutes or until just set in center. Let cool. Place powdered sugar in a fine sieve and dust top. Store in refrigerator.
*If your UltimaTM has preset speeds, follow the first 2 step and then do the following: Set to LOW and flip the switch to START. Blend for 5 seconds. Increase to HIGH and blend for 45 seconds or until smooth.
