Quinoa & Cheese Stuffed Portobello Mushrooms

Ingredients

1 celery rib, roughly cut,
1/4 red onion, peeled and roughly chopped,
1/2 green pepper, seeded and roughly chopped,
1 roasted red pepper,
4 oz. Neufchatel cheese, softened,
1/3 cup white cooking wine,
1 cup cooked quinoa,
4 large Portobello mushrooms, cleaned

Instructions

  1. Preheat the broiler or grill on medium-high.
  2. Place the celery, onion and pepper in the 40 oz. Processing Bowl and pulse until evenly chopped. Spoon into a mixing bowl.
  3. Place the cheese and wine in the Bowl and pulse until smooth. Add to the chopped vegetables and quinoa. Mix well to combine.
  4. Stuff each mushroom with the quinoa mixture and broil or grill until the mushrooms are soft and the stuffing is warm, about 6-8 minutes.
