Makes 12 muffins

1 seedless orange, cut in wedges,
1/4 cup orange juice,
1/2 cup dates, chopped,
1 egg
1/2 cup butter,
1/2 cup raw unfiltered honey,
3/4 cup whole wheat flour,
1 tsp. ground ginger,
1 tsp. ground cinnamon,
1 tsp. baking powder,
1 tsp. baking soda


  1. Preheat oven to 400*F degrees.
  2. Place the orange wedges in the Processor Bowl.
  3. Pulse until completely smooth. Add the orange juice, dates, egg, butter and honey.
  4. Pulse again to mix. In a mixing bowl, whisk together the dry ingredients.
  5. Pour the blender mixture into the dry ingredients and mix until just moistened.
  6. Pour into prepared muffin tins. Bake for 18- 20 minutes.

Doesn’t taste like orange

This recipe makes a moist muffin, but it doesn’t taste like ginger or orange. I modified the recipe by adding zest of an entire orange and doubled the ginger, and reducing the honey by half. Even with those changes it tasted like a ginger muffin with a very subtle hint of orange.
