Frittata with Hash Brown Potatoes and Bacon

2 tablespoons canola oil,
1 large onion, chopped,
1 large green pepper, chopped,
4 strips bacon, chopped,
1/2 of a 32-ounce package frozen died hash brown potatoes (about 3 ½ cups),
12 eggs,
3/4 cup milk,
1/2 teaspoon salt,
1/4 teaspoon ground black pepper,
1 cup shredded cheddar cheese


  1. Pour oil into pot. Set to STOVETOP HIGH and heat oil. Add onion, green pepper, and bacon to pot. Cook uncovered for 15 minutes or until vegetables are tender, stirring often.
  2. Stir in potatoes. Cover and cook 5 minutes.
  3. Beat eggs, milk, salt, and black pepper in bowl. Set pot to STOVETOP MED. Stir egg mixture and cheese into pot. Cover and cook 10 minutes or until the egg mixture is set.
