Healthy Peanut Butter Cookies



Ingredients

cup peanuts, dry roasted, unsalted
1/3 cup peanut or vegetable oil
1 ¼ cups whole wheat flour
1/4 cup oatmeal
½ teaspoon salt
1 teaspoon baking powder
½ cup honey
½ cup sugar
1 egg
1 teaspoon vanilla
1 teaspoon cinnamon

Instructions

reheat oven to 350˚F. Add peanuts and oil to the 40-ounce blender jar fitted with the blade. Pulse and hold until peanuts are turned into a butter. Replace blade with dough paddle. Add remaining ingredients and blend until all ingredients are thoroughly incorporated. Form 1 inch balls with dough and drop cookies onto cookie sheet spaced about 1 ½ inches apart, flatten with a fork. Cook for about 11 minutes or until cookies are lightly browned on bottoms. Makes approximately 18 cookies.

Veggie Cocktail



Ingredients

4 stalks celery, halved
3 tomatoes, quartered
2 carrots, halved
2 onions, peeled and quartered
2 beets, trimmed and quartered
½ cucumber, halved
2 green peppers, cored and quartered
2 cloves garlic, peeled
6-8 ice cubes

Instructions

Add all ingredients to the 72-ounce blender jar.  Blend until smooth.

Dairy-Free Iced Mocha Chiller



Ingredients

Ice
2 cups coffee, cooled
1/3 cup low calorie chocolate sauce

Instructions

Fill 72-ounce blender jar about 2/3’s full with ice.  Add coffee and chocolate sauce.  Blend until all ingredients are thoroughly incorporated.

Ice Cream



Ingredients

2 cups frozen fruit
½ cup milk, skim milk or cream (or any combination of dairy to equal ½ cup)
1teaspoon sweetener or sugar

Instructions

Add all ingredients to the 40-ounce blender jar.  Blend until mixture is thoroughly incorporated and mixture is thick and smooth.  Serve immediately.

Homemade Whole Wheat Pizza Dough



Ingredients

¼ ounce pkg. dry active yeast
1 teaspoon salt
1 tablespoon sugar
⅔ cup water, warmed to 110-115°F
¼ cup canola oil (substitute olive oil)
2 cups whole wheat flour

Instructions

Place the yeast, salt, sugar and water in the bowl. Pulse on 1 for 10 seconds. Add the oil and flour, 1 cup at a time, pulsing on 1 until the dough is smooth and no lumps remain. Transfer the dough to a lightly-oiled bowl and cover. Let rise for about 1 hour.

If you are making high-rise pizza dough, punch down the dough and let rise again for 45 minutes. If not, eliminate the second rising and spread the dough onto a pizza pan or baking sheet that has been lightly coated with cooking spray.

Add sauce and toppings as preferred and bake at 425°F for 25-30 minutes, or until the crust is lightly browned and the toppings and cheese are hot.
