Maple-Chicory Iced Coffee

Ingredients

    1. 3 Ninja® Single-Serve Scoops (or 3 tablespoons) ground coffee & chicory blend (found in your grocer’s coffee aisle)
    2. 2 cups ice
    3. 3/4 cup 2% milk
    4. 2 teaspoons maple syrup, or to taste

Directions

  1. Size: Cup setting
    Brew: Over Ice
    1. Following the measurement above, place the ground coffee & chicory blend into the brew basket.
    2. Place the ice, milk, and maple syrup into a large plastic cup; set cup in place to brew.
    3. Select the Cup size; press the Over Ice Brew button.
    4. When brew is complete, stir to combine.

Milk and Honey Coffee

Ingredients

    1. 4 Ninja® Single-Serve Scoops (or 4 tablespoons) ground coffee
    2. 2 tablespoons honey
    3. 1/4 cup half & half

Directions

Licorice Over Louisiana Coffee

Ingredients

    4. 1/2 cup 1% milk

    2. Place sugar into a mug; set mug in place to brew.
    3. Select the Cup size; press the Rich Brew button.
    4. While coffee is brewing, place milk into the glass jar of the Ninja Easy Frother™. Microwave on High for 1 minute. Remove from microwave, secure lid, and pump the Frother 15 times. Or use a small microwave-safe jar with lid; secure lid, shake milk until foamy, remove lid, and microwave on High for 1 minute until milk is hot and froth is set.
    5. When brew is complete, gently pour frothed milk into coffee.

Flat White Coffee

Ingredients

    2. 1/2 cup whole milk

Coffee Tres Leche Cake

Ingredients

    1. 3 Ninja® Carafe Scoops (or 6 tablespoons) ground coffee
    2. 1 1/2 cups flour
    3. 1 tablespoon baking powder
    4. 4 eggs, yolks and whites separated
    5. 1 1/2 cups granulated sugar
    6. 1 can (14 ounces) sweetened condensed milk
    7. 1 can (12 ounces) evaporated milk
    8. 1 3/4 cups heavy whipping cream, divided
    9. 4 tablespoons coffee liqueur
    10. 3 tablespoons orange liqueur
    11. 1 teaspoon ground cinnamon
    12. 2 tablespoons caramel sauce, for garnish
    13. 1/4 teaspoon salt, for garnish

Directions

  1. Size: Half Carafe setting
    Brew: Over Ice
    1. Following the measurement above, place the ground coffee into the brew basket.
    2. Set the carafe in place to brew.
    3. Select the Half Carafe size; press the Over Ice Brew button. Set brewed coffee aside.
    4. Preheat oven to 350°F. Grease a 10-inch cake pan and line bottom with greased parchment paper.
    5. In a small bowl, combine flour and baking powder; set aside.
    6. Using an electric mixer, whip egg whites and sugar on medium-high until semi-stiff peaks form, about 4 minutes.
    7. Reduce mixer speed to low; add egg yolks one at a time. Then slowly add flour mixture and 1/2 cup brewed coffee, alternately, until well combined, about 2 minutes.
    8. Pour batter into pan; bake for 40 minutes, or until wooden toothpick inserted in center of cake comes out clean.
    9. Allow cake to cool completely, then transfer to a 2-inch deep square casserole dish.
    10. Using a fork, poke lots of holes in the cake, making sure to puncture every inch.
    11. In a bowl, combine remaining coffee with sweetened condensed milk, evaporated milk, 3/4 cup heavy cream, coffee liquor, and orange liquor.
    12. Pour mixture over cake, then cover with plastic wrap and chill in refrigerator 6 to 24 hours or until all liquid is absorbed.
    13. Whip remaining 1 cup heavy cream with cinnamon until soft peaks form and spread over top of cake. Drizzle with caramel sauce and sprinkle with salt.

  3. Cooktime: 40 minutes plus Chill time: 6–24 hours
  4. Servings: 1 cake (16 servings)

Double-Shot White Russian

Ingredients

    1. 3 Ninja® Single-Serve Scoops (or 3 tablespoons ground coffee)
    2. 2 cups ice
    3. 2 ounces vodka
    4. 2 ounces coffee liqueur
    5. 4 tablespoons heavy cream, or to taste

Directions

  1. Size: Cup setting
    Brew: Over Ice
    1. Following the measurement above, place the ground coffee into the brew basket.
    2. Fill a plastic or metal cocktail shaker with the ice; set shaker in place to brew.

Classic Tiramisu

Ingredients

    1. 3 Ninja® Carafe Scoops (or 6 tablespoons) ground coffee
    2. 6 large egg yolks
    3. 1/2 cup granulated sugar
    4. 2 cups mascarpone cheese
    5. 2 cups heavy whipping cream
    6. 1/2 cup coffee liqueur
    7. 2 packages (4.7 ounces each) lady finger cookies
    8. 1 heaping tablespoon unsweetened cocoa powder, placed in a small sieve or strainer for dusting

Directions

  1. Size: Half Carafe
    Brew: Specialty
    1. Following the measurement above, place the ground coffee into the brew basket.
    2. Set a small bowl in place to brew.
    3. Select the Half Carafe size; press the Specialty Brew button. Allow coffee to cool.
    4. While coffee is cooling, use a double boiler (if you don’t have a double boiler, use a small pot full of almost simmering water topped with a large metal bowl). In the double boiler or metal bowl, add egg yolks and sugar, and whisk constantly for 4 minutes, or until egg yolk is light yellow with a smooth, creamy melted marshmallow texture. Remove from heat.
    5. Whisk mascarpone cheese into egg yolk mixture.
    6. In a separate large bowl, mix heavy cream with 2 tablespoons cooled brewed coffee, then whip until soft peaks form.
    7. Add coffee liqueur to remaining brewed coffee.
    8. Assemble the tiramisu by dipping lady fingers one at a time into coffee liqueur mixture and placing in an even layer on the bottom of a trifle bowl or ceramic dish. Spread 1/3 of the mascarpone egg mixture onto lady fingers, followed by 1/3 of the whipped cream, followed by a dusting of cocoa powder. Repeat layers again starting with coffee-dipped lady fingers. The final layer should be whipped cream topped with an even dusting of cocoa powder.
    9. Chill in refrigerator 4 to 24 hours before serving.

The Eggstravaganza Month April 2014

This month many of us look forward to the big loveable bunny that brings us chocolate, candy and colorful eggs. Although these sweet treats are deliciously divine, they aren’t doing much for your health. Instead, let us celebrate this holiday’s true treasure – eggs! Here are 8 eggcellent health benefits:

Eggs protect your eyesight – Rich in leutin and zeaxanthin, these antioxidants have been found to protect your peepers from UV damage and reduce chances of developing cataracts.

Eggs are brain food – Egg yolks contain choline, an essential nutrient that stimulates brain function, development, memory and alertness. Choline is especially important for women who are pregnant, supporting fetal brain development.

Eggs are good for your waist line – The protein and fat in eggs sustain your energy levels and keep you feeling fuller for longer. Studies have shown those who eat eggs are more likely to lose weight than those who eat bagels.

Eggs are budget friendly – High protein foods such as a nice cut of steak can be a bit expensive, while eggs are still high in protein and reasonably priced.

An egg a day may keep the doctor away – Whole eggs are one of the best sources of choline, a nutrient that may ward off breast cancer, lower risk of blood clots, heart attack and stroke.

Eggs are beautifying – Eggs are high in sulfur, aiding in the productions of collagen and keratin, providing you with a shiny mane, strong nails and radiant skin.

Your muscles eat up eggs – Eggs contain around 6 grams of protein and a certain sequence of amino acids that aid in muscle development and repair, a great post workout snack!

Eggs aren’t going to worsen your cholesterol – Eggs do contain a significant amount of cholesterol, but recent studies have disproven any impact on your blood cholesterol levels when eggs are eaten in moderation.

April Exercise Tips:

Toe Touch Sit-Ups – Lie on your back with legs extended out and spread about 24 inches apart or so. Perform a sit up, with arms reaching up and then over touching your left toe, return to starting position and repeat exercise touching right toe. Repeat toe touch sit-ups for a total of 25 times.

Runners Stance Toe Taps – Begin in a lunging/runner’s stance with fingertips touching ground and right leg centered in between arms under your chest. With minimal movement of the body and keeping your hips low, bring your left knee towards your chest and meet your toe with your right hand, and then return. Perform this exercise 3 sets of 12 reps per each leg.

Walking Planks – Assume the plank position with your body in a straight line from head to your ankles. Tighten your core, then begin moving/walking to your right using your right hand and right foot simultaneously. Take 5 steps right, then return 5 steps left. Perform this for 2 sets 30 seconds.

Burpees – Begin in a squat position with hands placed on the floor in front of you. Kick your feet back into a push-up position, immediately return your feet to the squatting position, and then leap up as high as possible. Perform these movements for 1 minute in quick succession in order to maximize the exercise.

Fast Feet – Place a jump rope, string, cord or simply imagine a line just in front of your toes. Step quickly forward and backwards over the line as rapidly as possible for 30 seconds – 1 minute.

April Health Tips:

Get in the Garden – spring is here and what better way to get some exercise than being outside in your garden. Plant some vegetables for fresh and healthy treats.

Office Break – Take a walk during your lunch break at work, you’ll get an opportunity to refresh your thoughts, get some exercise, and maybe stop and smell the roses.

Avoid Distracted Dining – Try not to plop down in front of your television at meal time; you are more likely to consume more calories. Turn the TV off and savor every bite.
